Hey guys! I have been thinking of making this addition to my blog since long. I have finally decided on doing it today.

Stuffed Capsicum !!

Always been a capsicum lover.!

Stuffed capsicum ( For two )

Ingredients –
Capsicum green whole – 2 large
Potato – 2 small
Onion – 1
Tomato – 1 large
Garlic cloves – 3-4
Green chillies – 3 medium sized
Turmeric and Salt
Ginger – medium sized
Coriander – handful

Method –
Firstly slice the upper part of the capsicum and using the end of a spoon remove the seeds inside. Wash it, pat dry and keep aside.
Keep aside the sliced upper part to cover the capsicum later.

Heat a kadai with 2 spoons oil.
Add finely chopped garlic, ginger and green chillies.
Then add finely chopped potato and cook for 5 mins, once the potato softens, add onion finely chopped and fry till the onion becomes translucent.
Then add finely chopped tomato, half spoon turmeric and salt. U can add some garam masala if you like!.
Let the filling cook completely, if needed add some water and mash it a little retaining the texture ( not to a paste! )
Add chopped coriander to the mixture and let it cool to room temperature.

After it has cooled, stuff the prepared capsicum taking care not to overfill to avoid spilling the mixture during cooking.

Then in a separate kadai, add some oil, and fry the stuffed capsicum on all sides.
U can even fry the filling side for 2-3 mins if u like the crispy potato taste!

Finally put the sliced upper portion of capsicum and close the lid and cook for 5mins.

It’s done!.Β 
Garnish wid some more coriander and serve hot.
It goes well wid rotis/rice!

Pressure cooker Pizza!

Pizza in a cooker! Sounds yummyyyy

Activate yeast
Half cup warm water + 1 teaspoon sugar + half teaspoon dry yeast – 20mins

1 n half cup maida
1 n half cup atta
Activated yeast
Some water
Tuck and Leave to raise

Pizza sauce
Grind half tomato, half onion, 2 garlic cloves, 1 small piece ginger into paste
Sautee half onion n onion cut into fine pieces, add the ground paste, put some salt, Italian seasonings n chilli flakes and cook till mixture thickens
Put aside.

Pizza toppings
Capsicum – half
Sweet corn
Onion – 1
Tomato – 1

Take Half of the risen flour n roll into pizza base, slightly thick, not very thin.
Poke the base with fork to allow uniform cooking.
Spread the prepared sauce and a layer of cheese ( preferably mozzarella )
Add in the toppings and some Italian seasonings and another layer of cheese.
Put the pizza in a flat container and place in the cooker with a stand or another aluminium utensil between the stand and container.
You can pre heat cooker for 10 mins before placing. ( Remove cooker rubber base of lid and whistle )
Put in high heat for 20-30 mins. Check to avoid burning.
Hot pizza is done.!
